Crostini with Old Amsterdam

Crostini with Old Amsterdam


  • 2 tablespoons of ginger grated
  • ½ a red chili pepper
  • 5 oz. of Surimi (imitation crab meat)
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of sour cream
  • Salt
  • Red pepper
  • The juice from half a lime
  • 8-12 slices of baguette
  • 1 ripe avocado
  • 10.5 oz. of Old Amsterdam & ½ a packet of water cress


Clean, stone, rinse and finely dice the chili. Cut the Surimi into cubes and mix it in with the mayonnaise, ginger, chili and sour cream. Add salt, red pepper and lime juice to taste. Toast the bread on both sides in a hot grill pan. Peel, halve and stone the avocado. Cut the fruit into small pieces. Cut the Old Amsterdam into slightly thicker slices and then into little triangles. Distribute the crab cream over the crostinis and put a little avocado and Old Amsterdam on top. Use the watercress to decorate.
