Marshmallow made from Old Amsterdam


    For the marshmallow:

    • 3.5 oz. Old Amsterdam, grated
    • 5.3 oz. milk
    • 5.3 oz. egg whites
    • 7 sheets of gelatine soaked in cold water

    For the olive cake:

    • 5 eggs
    • 3/4 cup olive oil
    • 2½ teaspoons sea salt
    • 8.8 oz. chopped black olives
    • 7.9 oz. flour
    • 1 teaspoon baking powder


    Marshmallow. Heat the milk and pour onto the cheese. Heat the milk and cheese together for a further 3 minutes, but do not let the mixture boil. Sieve the milk and add the gelatine, then leave to cool to room temperature. Beat the egg whites, add the milk mixture and beat together while cold. Spoon into a tin and refrigerate for 4 hours.
