Old Amsterdam cheese croquettes


  • 3.2 oz. Old Amsterdam
  • 1.2 oz. stale white bread
  • 5 chive stalks, chopped
  • 1 teaspoon paprika
  • 2 egg whites


Grate the Old Amsterdam. Turn the stale bread into breadcrumbs, using the steel blades of the food processor. Add the cheese, chives and paprika to the breadcrumbs and continue to blend. Beat the egg whites until stiff and stir carefully into the breadcrumb mixture. Using your hands, shape this mixture into balls about the size of a walnut and then shape the balls into croquettes. Refrigerate for at least half an hour. Heat the deep fryer until a piece of white bread browns in 30 seconds, then deep-fry the croquettes golden-brown in 3 minutes. Don't put too many in the pan at once, and turn regularly.
