Sweet Mille-Feuille with Old Amsterdam


  • 2 apples
  • 2 pears
  • 2 tablespoons of lemon juice
  • ½ a honeydew melon
  • 9 oz of strawberries
  • 9 oz of gooseberries
  • 9 oz of (sour) cream
  • 2 tablespoons of honey
  • Fresh black pepper
  • 10.5oz of Old Amsterdam


Wash and stone the apples and pears, cut into extremely fine slices and sprinkle them with lemon juice. Cut the melon in half, then in quarters, and cut the strawberries and gooseberries in half. Pour the sauce made of cream, honey and black pepper over the fruit. Use a glass to cut out four thin slices of Old Amsterdam per person, put one slice on each plate, pour the fruit mixture onto this, add another slice of cheese and another layer of fruit mixture. Repeat this and finish off with the last slice of cheese
