What is the difference between Old Amsterdam wedges from self-service and the fresh cheese counter?

The quality and flavor of Old Amsterdam are essentially the same for both self-service and fresh counter cheese. Both products are similarly packaged (in foil, with the cheese exposed to oxygen) and cut from a wheel.

The difference lies in the timing and who does the slicing. Cheese from the fresh counter is sliced by the retailer and is generally sliced more recently than the self-service cheese, which is pre-sliced by us. This makes fresh counter cheese typically fresher.
