Crab biscuits with mint, spring onion and Old Amsterdam

We call them crab biscuits because it sounds nice, but for this recipe we simply use surimi sticks. If you find it too camp, you can also use crayfish or prawns.

Ingredients

  • 3 eggs
  • 2/3 cup of self-rising flour
  • ½ teaspoon salt
  • 2/5 cup of crabmeat or surimi
  • 2 handfuls of small green peas from the freezer
  • 1/5 cup of grated Old Amsterdam
  • ½ chilli pepper
  • 2 spring onions
  • leaves from 3 sprigs of mint
  • sunflower oil
  • 4 tablespoons ketchup
  • 2 teaspoons tabasco
  • 1 lime

Preparation

Crack the egg in a bowl and mix it with the flour and the salt. Pull the surimi pieces apart and put them with the peas and cheese into the egg mix. Finely chop the chilli pepper, cut the spring onions into rings and the mint leaves into thin slices, and then throw it all into the mix. Heat a layer of oil in a frying pan and add some tablespoons of the mixture. Push these biscuits a bit flat. Fry them for 3-4 minutes on one side until nice and brown, then turn them over and fry the other side. Place on paper towel to remove excess oil. Mix the tabasco into the ketchup and cut the lime into pieces. Serve this with the crab biscuits while they are still hot.
