Preparation
Preheat the oven to 200°C. Cut the baguette at an angle into slices of circa 0.5 – 1 cm. Place the baguette slices on an oven tray and toast them in the oven for several minutes until light brown. Quarter the Brussels sprouts. Briefly blanch them in boiling water and then fry the Brussels sprouts in a frying pan with butter and honey until they begin to caramelize. Season to taste with salt and pepper. Cut the shiitake into smaller pieces and fry for circa 5 minutes until brown. Season to taste with salt and pepper and set aside to cool. Mix the shiitake with the Brussels sprouts and then place a small amount of the mixture on each of the slices of toasted baguette (crostinis). Put some Old Amsterdam on top of each crostini. Place some more of the shiitake and Brussels sprouts mixture on top and finish with some more Old Amsterdam. Place the crostinis on an oven tray and bake them in the oven until the cheese has melted. Serve the crostinis on a board and garnish with some pomegranate seeds, fresh rosemary and thyme.

Tip: You can prepare the mixture of Brussels sprouts and shiitake ahead of time.
