Fancy a hearty burger? Try this Smokey Burger with Old Amsterdam cheese, spicy paprika salsa, and roasted garlic mayonnaise. The creamy cheese melts perfectly over the juicy meat, while the salsa and mayonnaise provide an explosion of flavor. Ideal for BBQs or weekend dinners.

Ingredients

6 slices of Old Amsterdam cheese

2 Pointed peppers

1/2 head of garlic, cloves separated

Olive oil

100 g smoked bacon, finely chopped

550 g ground beef (ask the butcher to coarsely grind the beef shoulder, or use good quality ground beef)

4 tbsp Mayonnaise

1 tablespoon sun-dried tomato tapenade

1/2-1 tbsp Sambal oelek

1/2-1 el Worcestersaus

4 Crisp lettuce leaves, such as Romaine

4 tbsp Sweet and sour red onion (ready-made)*

4 white rolls, halved

How to make it:

  1. Preheat the oven or BBQ to 200°C.
  2. Place the bell pepper and garlic on a baking sheet lined with parchment paper (if using the oven) and drizzle with olive oil. Roast the bell pepper and garlic in the oven or on the BBQ for 20-25 minutes, checking occasionally to see if the garlic has caramelized and softened (if so, remove it). Allow to cool for a few minutes.
  3. Mix the bacon with the ground beef and season with salt and freshly ground pepper. Divide the ground beef into 4 flat patties, larger than the buns (the meat shrinks during cooking).
  4. Clean the bell peppers by removing the skin and seeds. Finely chop them, mix with the tomato tapenade, sambal, and Worcestershire sauce to taste. Finish with salt and freshly ground pepper.
  5. Now squeeze the garlic cloves and mix the roasted garlic with the mayonnaise and plenty of freshly ground pepper. Cook the burgers on the BBQ or in a frying pan for 4-5 minutes until done, place 1.5 slices of Old Amsterdam cheese on each burger and melt for approx. 30 seconds.
  6. Spread the bottom half of the burger buns generously with bell pepper salsa. Top the buns with the burger, lettuce, and pickled onions. Spread the top half with garlic mayonnaise and close the buns.

Cooking tip!

After cooking, let the burger rest for a few minutes under foil. This helps retain the juices and allows the Old Amsterdam cheese to melt beautifully over the meat.
