Enjoy this delicious Porchetta Sandwich and discover for yourself how this combination of roasted tomato and spicy anchovy mayonnaise and the rich flavor of Old Amsterdam tastes!

Ingredients

250 g small tomatoes

2 sprigs of rosemary

1 clove of garlic, sliced

Salt and freshly ground pepper

2 anchovy fillets

1/2 lemon

check_box_outline_blank

4 tablespoons mayonnaise

8 slices of farmhouse bread, toasted

6 slices of porchetta

check_box_outline_blank

1/2 fennel, finely chopped

40 g arugula

check_box_outline_blank

Olive oil, good quality

How to make it:

  1. Preheat the oven to 200 degrees Celsius.
  2. Place the tomatoes with a sprig of rosemary and garlic on a baking sheet lined with parchment paper, drizzle with olive oil, and season with salt and pepper.
  3. Roast the tomatoes in the oven for 15 minutes.
  4. Finely chop the needles from the other sprig of rosemary together with the anchovies, mix with mayonnaise, and season with lemon zest and juice.
  5. Spread the mayonnaise on the slices of bread, top with roasted tomatoes, porchetta, fennel, and arugula, drizzle with olive oil, and top with Old Amsterdam cheese and the remaining slices of bread.

Cooking tip!

Roast the tomatoes a little longer until they are lightly caramelized: their sweetness balances the salty anchovy mayonnaise and savory Old Amsterdam cheese even better.
