This pasta dish is creamy, rich, and full of Italian character. The fennel sausage ragout brings depth, while lemon and sage add freshness and balance. Finished with Old Amsterdam, it becomes a truly indulgent meal.

Ingredients

1 bag of Old Amsterdam Original Grated Cheese

Olive oil

400 g Fresh sausage, good quality

3 cloves of garlic, finely chopped

1.5 tsp fennel seeds

1 teaspoon chili flakes

1 bunch of sage (15g)

200 ml white wine

check_box_outline_blank

800 g Peeled tomatoes or canned cherry tomatoes

200 ml chicken stock or water

check_box_outline_blank

100 ml whipping cream

1 lemon

400 g Tagliatelle

How to make it:

    1. Heat a generous drizzle of olive oil in a large frying pan.
    2. Remove the casing from the sausage and break the meat into pieces.
    3. Fry for 4–5 minutes until golden brown.
    4. Add garlic, fennel seeds, chili flakes, and 2 sprigs of sage.
    5. Cook briefly, then deglaze with white wine.
    6. Let the wine reduce almost completely.
    7. Add the tomatoes and chicken stock.
    8. Cover and let simmer gently for about 45 minutes.
    9. Stir, add the cream, and simmer for another 45 minutes.
    10. Season with salt, lemon zest, and freshly ground pepper.
    11. Heat a little olive oil in a pan and fry the remaining sage leaves until crispy.
    12. Cook the tagliatelle in salted water according to package instructions.
    13. Drain and reserve a little pasta water.
    14. Add the pasta to the sauce and mix well.
    15. Add a splash of pasta water for extra creaminess if needed.
    16. Divide over plates and top with crispy sage and extra Old Amsterdam cheese.

Cooking tip!

Adding pasta water helps emulsify the sauce, creating a smoother and more cohesive texture.
