Croquettes with Curry & Tarragon Mayonaise

The Croquette (or as we call it in Dutch ‘Kroket’) is a traditional Dutch snack that’s normally filled with meat, but which is also delicious filled with Gouda cheese.

Ingredients
- 1.5 gelatin leaf/sheet
- 1.5 gelatin leaf/sheet
- ¼ cup of butter
- Approximately a little less than 1/2 of flour and extra for breading
- 2 1/8 cup of milk
- 2 eggs
- 1/5 cup of whipped cream
- 2/5 cup of grated Old Amsterdam Aged Gouda
- 1 tbsp coarse mustard
- 1 tbsp grated curry powder
- 1/5 cup of breadcrumbs
- 1/5 cup panko
For the dragon mayonnaise:
- 7/8 cup of tarragon, leaves collected

Preparation
Preheat the oven to 350 F. Place the slices of bread on a bread board and spread a generous layer of mayonnaise over them. Turn four slices over and place cheese and ham on top. Slice the leek into very fine rings and put these on the toasties. Then place the other slices of bread on top, with the mayonnaise side upwards. Warm a frying pan and fry two toasties until they have nice brown crusts. Flip over and repeat. Do the same with other two toasties, while keeping the first two warm in the preheated oven. Serve with spicy mustard.
