Richly filled pearl couscous with pomegranate and avocado with Old Amsterdam Tasty Grill

With green vegetables, tomatoes and fried bantam

Ingredients

  • 1 Pack of Old Amsterdam Tasty Grill (2 pieces)
  • 125g pearl couscous
  • 100g cherry tomato mix
  • 1/2 avocado
  • 1 small red onion
  • salt and pepper
  • 2 sprigs of mint (leaves)
  • 50g rocket
  • 2 tbsp pomegranate seeds
  • 1 tbsp pistachio nuts
  • Dressing:
  • 1 tbsp pomegranate syrup
  • 3 tbsp olive oil
  • juice of 1/2 lemon
  • Additional requirements: grill pan

Preparation

  • Cook the pearl couscous according to the instructions on the packaging. Halve the tomatoes. Halve, peel and dice the avocado and sprinkle with lemon. Cut the onion into half rings. Coarsely chop the mint and arugula.
  • Drain the pearl couscous, rinse with lukewarm water and let cool. In the meantime, make the dressing: stir the ingredients together to form a thick dressing and add salt and pepper to taste.
  • Add the tomatoes, avocado, onion, arugula and mint to the couscous, add a spoonful of dressing and season with salt and pepper.
  • Bake the Old Amsterdam Tasty Grill according to the instructions on the packaging. Divide the salad into 2 deep plates or on a platter and sprinkle with pomegranate seeds and chopped pistachio nuts. Top each plate with an Old Amsterdam Tasty Grill.
