Sandwich with omelette and Old Amsterdam Grater

Ingredients
- 2 slices of bread
- 2 eggs
- 100 ml cream
- 25 g Old Amsterdam Grater
- 1 tbsp butter
- 1 tomato
- 2 sprigs of chives
- salt and pepper
Preparation
- Break the eggs into a bowl and beat them together with the cream and the Old Amsterdam Grater. Season everything with salt and pepper.
- Melt a knob of butter in a frying pan and pour the egg mixture into the pan. Fry the omelette over low heat, meanwhile spread the slices of bread lightly with butter.
- Top the sandwich with the omelette and garnish it with tomato slices and finely chopped chives.
