Sweet potato stew with Tasty Grill by Chickslovefood

With green vegetables, tomatoes and fried bantam
Ingredients
- 2 Old Amsterdam Tasty Grill Original
- 500g sweet potatoes
- 1 jar of sun-dried tomatoes in oil
- 2 handfuls of arugula
- 1 handful pecan nuts (salted)
Preparation
- Peel the sweet potatoes and cut them into cubes. Place in a pan of boiling water and cook for about 15 minutes until the potatoes are done.
- In the meantime, coarsely chop the pecan nuts and cut the sun-dried tomatoes into thin strips.
- Heat a grill pan and fry the Old Amsterdam Tasty Grill alternately without oil for about 3 minutes per side until golden brown stripes appear.
- As soon as the sweet potatoes are done, drain them and mash them with a dash of cooking liquid and a dash of oil from the tomato jar.
- Stir the pecan nuts, arugula and sun-dried tomatoes into the stew. Season with a pinch of salt and pepper. Divide the stew over 2 plates.
- Cut the Tasty Grills into strips and place on the stew.
