Parsnip fries with Old Amsterdam and roasted garlic dip

Haute friture with Old Amsterdam. These parsnip fries with Old Amsterdam not only taste delicious but they also look like a treat on your table. A dish to enjoy with company.
Ingredients
- 200 g parsnips
- 50g Old Amsterdam Original 48+
- 5 sprigs of fresh thyme
- Olive oil
For the roasted garlic dip
- 1 bulb of garlic
- 1 tbsp olive oil
- 2 tbsp mayonnaise
- 2 tbsp sour cream
- 1 tsp dried rosemary
- Salt and pepper
Preparation
Peel the parsnips and cut them into fries. Preheat the oven at 425 °F. Place a sheet of parchment paper on a baking tray or oven dish and place the parsnip fries on it. Season lightly with sea salt and place the tray or dish in the oven. Take the dish or tray out after 15 to 20 minutes and shake or turn the fries. Spread the cheese over the fries and put it back in the oven to melt and become crispy for another 10 minutes.
Roasted garlic dip
Start by roasting the garlic: preheat the oven at 300 °F. Separate the garlic cloves and place these on aluminium foil. No need to peel the cloves. Add a little oil and make a package with plenty of space for the cloves. Make sure it is closed off at the top. Place the package in the oven and roast the cloves for approximately 60 minutes. Set aside to cool for a while and then crush the cloves using a garlic press into a bowl. Use a fork to make sure it is finely crushed. Fold the mayonnaise and sour cream into the garlic and add salt, pepper and rosemary to taste.
Is parsnip not in season or do you not really like parsnip? You can use potatoes or sweet potatoes instead of parsnip. Rest assured, your guests will rave about the dish!
