20 minutes – 2 persons – Lunch

Ingredients

  • 1 piece of Old Amsterdam Matured to shave, or 4 pre-packed slices
  • 2 slices of white or brown sourdough bread
  • 2 red onions
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 sprigs of finely chopped fresh thyme
  • 1 tsp honey
  • 1 handful coarsely chopped walnuts
  • Salt and freshly ground black pepper

Preparation

  • Preheat the oven to 190 ºC. Cut the onions into (half) rings and fry in the pan with olive oil for 5 minutes until the rings are soft.
  • Then add the honey to the onions so that they caramelize. The balsamic vinegar can then be added. Season with salt, pepper and a few finely chopped thyme leaves.
  • Place two slices of bread on a baking sheet. Top the bread with the slices of mature cheese and sprinkle the cheese with the caramelized onion.
  • Place this in the oven for 2 minutes until the cheese has melted. Spoon another spoonful of honey over it and finish with extra fresh thyme. Then sprinkle with coarsely chopped walnuts.

Enjoy it!
