Melted sandwich with Old Amsterdam Matured, caramelized onion, walnuts and thyme
20 minutes – 2 persons – Lunch
Ingredients
- 1 piece of Old Amsterdam Matured to shave, or 4 pre-packed slices
- 2 slices of white or brown sourdough bread
- 2 red onions
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 sprigs of finely chopped fresh thyme
- 1 tsp honey
- 1 handful coarsely chopped walnuts
- Salt and freshly ground black pepper
Preparation
- Preheat the oven to 190 ºC. Cut the onions into (half) rings and fry in the pan with olive oil for 5 minutes until the rings are soft.
- Then add the honey to the onions so that they caramelize. The balsamic vinegar can then be added. Season with salt, pepper and a few finely chopped thyme leaves.
- Place two slices of bread on a baking sheet. Top the bread with the slices of mature cheese and sprinkle the cheese with the caramelized onion.
- Place this in the oven for 2 minutes until the cheese has melted. Spoon another spoonful of honey over it and finish with extra fresh thyme. Then sprinkle with coarsely chopped walnuts.
