Old Amsterdam Matured Melt with kimchi

Ingredients

  • approx. 50 g kimchi*
  • 2 sourdough sandwiches
  • 1 tbsp mayonnaise of your choice
  • 1 bunch of arugula
  • 2 slices of Old Amsterdam Matured
  • 1 spring onion
  • Additional requirements: Toaster or frying pan

Preparation

  • Let the kimchi drain in a sieve. Spread the sandwiches with mayonnaise, spread a piece of arugula on 1 sandwich and evenly spread the kimchi on top.
  • Cut the spring onion into rings and spread it on the sandwich together with the arugula. Cover with the other slice of bread.
  • Grill the sandwich in a sandwich maker or fry the sandwich in a frying pan. To prepare it in the frying pan, place the sandwich in a lightly buttered frying pan and place the lid on the sandwich. Fry the sandwich over medium heat for a few minutes until brown on one side and then turn over to brown the other side.
  • Press the sandwich a little with the lid and heat until the inside is warm and the cheese starts to melt.

* Kimchi is a collective name for fermented vegetables (usually cabbage). In Korea it is even the national dish, it is on the UNESCO Intangible Cultural Heritage list. It is fermented, just like sauerkraut. This means that yeasts, fungi and bacteria are used.
It is quite spicy and contains a lot of garlic. No fish sauce is used, so it is completely vegetable. Kimchi is available in cans or jars at the supermarket or store.
